Description

The heart should be soaked in cold water for 3 hours beforehand.

Ingredients

  • Beef hoof 20 oz
  • Salad Potatoes 5 pieces
  • Onion 2 pieces
  • Turnips 3 pieces
  • Turnips 1 piece
  • Parsley 1 piece
  • Pickles 2 pieces
  • Passata Tomato Sauce 2 cups
  • Bay leaf 2 pieces
  • Salt to taste
  • Green peppercorns 6 pieces
  • Parsley ½ bunch

Step-by-Step Guide

Step 1

Boil the heart for 3–4 hours until cooked, adding salt at the very last moment.

Step 2

Place in a bowl of cold water for half an hour. Slice into small pieces.

Step 3

Heat the tomato sauce in a water bath and pour it over the heart. Add sour cream on top.

Step 4

Chop and lightly sauté all the vegetables except for the pickles.

Step 5

Place the heart, sautéed vegetables, and sliced pickles in a saucepan or pot, sprinkle with pepper and bay leaves on top.

Step 6

Simmer with the lid on over low heat until the vegetables are soft.

Step 7

Garnish the finished dish with chopped parsley.
