Ingredients

  • Long-Grain Rice 5 oz
  • Sole fillets 2 pieces
  • Coconut Urbech 1 piece
  • Pineapple ½ piece
  • Corn Salad 1 bunch
  • Salt to taste
  • Ground Black Pepper to taste
  • Spices to taste

Step-by-Step Guide

Step 1

Sprinkle the fish fillet with salt and squeeze lime juice over it.

Step 2

Drill a hole in the coconut and pour the milk into a glass. Then crack the coconut open and remove the white flesh. Cut half of the flesh into small cubes.

Step 3

Place the fish on a baking sheet, pour coconut milk over it, and put it in the oven for 20–30 minutes. While the fish is baking, prepare the side dish—you can simply boil the rice, but if you want something unusual, you can try making orange rice, which pairs perfectly with this dish. Pour a tablespoon of olive oil into a frying pan, sauté one onion (you can also add finely chopped leek and a celery stalk), add 1.5 cups of water, grate the orange peel, squeeze the juice of the orange, add salt, and if available, a teaspoon of dried or fresh thyme works very well. Bring everything to a boil and simmer on low heat for 25 minutes.

Step 4

You can make a salad with lettuce leaves, finely chopped pineapple, coconut flesh cubes, and a sweet and sour sauce (vegetable oil, honey, lemon juice, and a bit of chili pepper).

Step 5

When serving the fish, drizzle it with the juice that formed on the baking sheet.
