Ingredients
- Ham 15 oz
- Butter 5 oz
- Farm fresh eggs 6 pieces
- Milk 8 tablespoons
- Breadcrumbs 20 oz
- Spinach 0 oz
- Mayonnaise 20 oz
- Chopped Sage Leaves 0 oz
- Dill 0 oz
- Tarragon 15 tablespoons
- Sugar 3 teaspoons
- Mustard Greens 1 tablespoon
- Cucumbers 2 pieces
- Scallions 1 bunch
- Chicken Broth 15 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the sauce. Place all the mayonnaise in a bowl, mix it with sugar and mustard. Chop the spinach and remaining herbs (set aside 2 tablespoons of chopped herbs for the croquettes), crush in a mortar, add 2 tablespoons of cold water, mix well, and strain the juice through a cloth. Combine with the mayonnaise. Dice the fresh cucumbers and green onions, add to the mayonnaise. The sauce is ready.
Step 2
Separate the yolks from the whites. Cream the butter with the yolks, adding them one at a time. Whip the egg whites until stiff peaks form.
Step 3
Cut the ham into small cubes, mix with the butter and yolks, season with pepper, add the breadcrumbs and 2 tablespoons of chopped herbs, then fold in the whipped egg whites, mixing the entire mass well.
Step 4
Form one croquette into a small sausage shape and drop it into boiling broth. If it holds its shape and does not fall apart, you can make croquettes from the remaining mixture; if it falls apart, add more breadcrumbs to the mixture and knead well.
Step 5
Cook over low heat. When all the croquettes float to the surface, cook them for another 2-3 minutes, remove with a slotted spoon onto a sieve to drain the broth, place in a deep dish, cool, pour over the sauce, and serve.
