Halibut with Tomato and Eggplant Salsa

Ingredients

  • Cilantro 1 bunch
  • Halibut 3 pieces
  • Eggplants 2 pieces
  • Tomatoes 3 pieces
  • Garlic 1 clove
  • Olive Oil 2 tablespoons
  • Meyer Lemon Juice 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the eggplants and slice them lengthwise, generously salt them and let sit for 5–10 minutes.

Step 2

Rinse the previously thawed fish, pat it dry with a paper towel, season with salt and pepper, and drizzle with olive oil. Place in a preheated oven at 355°F (350 degrees Fahrenheit) for 20 minutes.

Step 3

Gently squeeze the eggplants, cut them into cubes, and sauté in olive oil. Combine the cooked eggplants with the chopped tomatoes, add minced garlic, finely chopped hot pepper (optional), cilantro, and lemon juice, mix well, and season with salt if necessary.

Step 4

Top the hot cooked steak with salsa and serve immediately.
