Halibut with Scallops in Garlic Cream Sauce
Ingredients
- Halibut 4 pieces
- Scallops 5 oz
- Soy Sauce 3 tablespoons
- Garlic 2 cloves
- Shallot 5 oz
- Butter 0 oz
- Cream 22% 5 fl oz
- Parsley to taste
- Fish Oil to taste
Step-by-Step Guide
Step 1
Take the halibut steaks and scallops, let them thaw at room temperature, sprinkle with seasoning, and drizzle with soy sauce, then leave to marinate.
Step 2
Finely chop the shallot and garlic, sauté them in butter until translucent.
Step 3
Add the cream and cook for another 2 minutes, then add chopped parsley and remove from heat.
Step 4
Fold a sheet of parchment paper in half and cut it into rectangles approximately 30x40 cm.
Step 5
You should have four rectangles with a double layer of parchment for four steaks.
Step 6
Place a steak in the center of the rectangle, top with scallops, and drizzle with the cream sauce.
Step 7
Wrap the steak into a parcel, place in a preheated oven at 390°F, and bake for 20 minutes.
Step 8
Remove the cooked halibut with scallops, make a cut along the long side, and serve the dish hot directly in the parcels.
