Step-by-Step Guide
Step 1
For the sauce, sauté the onion and celery. Add the white wine, reduce by half, and pour in the fish stock. Cook until reduced to one-third. Add the cream, strain through a sieve, and cook until thickened.

Rub the fish with sea salt, dip in flour, and shake off the excess. Sauté until cooked in olive oil.
Step 3
For the gratin, slice the potatoes into rounds and arrange them in a fan shape on parchment paper. Season with salt. Rub with garlic. Drizzle with cream and top with grated Parmesan cheese. Bake until golden brown in the oven at 355°F for 15 minutes.
