Ingredients
- Halibut 20 oz
- Thyme 6 sprigs
- Olive Oil to taste
- Orange zest 20 pieces
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Remove bones from the fillet (if there are any), and cut into steaks (about 2 cm thick).
Step 2
Use a sharp knife to peel the zest from the orange, avoiding the white pith, and cut it into strips.
Step 3
Strip the leaves from the thyme sprigs, drizzle with sunflower oil, and season with pepper. Dip the fish steaks into the mixture.
Step 4
Create a foil envelope for the fish, placing strips of zest (6–8 strips for each steak) on the 'bottom'. Place a steak on top of the zest, drizzle with oil, and close the envelope.
Step 5
Preheat the oven. While it heats up to 390°F, the steaks will marinate.
Step 6
Place the envelopes in the oven for 5 minutes.
