Description
This dish should be served with chopsticks for easy unwrapping of the paper envelopes.
Ingredients
- Halibut 15 oz
- Medium-dry sherry 2 tablespoons
- Scallions 5 oz
- Vegetable Oil 0 fl oz
- Grated Ginger Root to taste
- Salt to taste
Step-by-Step Guide
Step 1
Cut the halibut fillet into small pieces, sprinkling each with salt, finely chopped green onions, and ginger.
Step 2
Place each piece on a sheet of paper, drizzle with sherry and oil. Fold the paper into envelopes so that they do not unfold on their own.
Step 3
In a deep pot, heat the vegetable oil to 355°F, using a slotted spoon to dip the envelopes with fish into the oil for three minutes. Drain and place on a warm plate.
Step 4
Garnish with green onion feathers and serve immediately.
