  • Milk 10 fl oz
  • Serrano Chili 5 oz
  • Wheat Flour 0 oz
  • Chocolate eggs 2 pieces
  • Lemon 1 piece
  • Cotton Oil 15 fl oz
  • Salt to taste

Step-by-Step Guide

Step 1

Place the hake fillet in a bowl with milk and soak for 30 minutes. During this time, turn the fillet over twice.

Step 2

Drain the milk and dry the fillet with a paper towel. Cut into 12 pieces. Season with salt and wrap each fillet in a piece of ham, securing it with a wooden skewer.

Step 3

Sift flour into one plate and beat the eggs in another. Heat the oil in a deep fryer or deep skillet to 180–375°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds). Coat the dried pieces of fillet first in flour, then dip in the eggs.

Step 4

Fry in hot oil in batches until golden brown. Remove the fish from the oil with a wide knife, let excess fat drain, and keep warm while frying the remaining pieces. Serve as soon as all the fish is ready, garnished with slices of lemon cut lengthwise.
