Hake Fillet in Breadcrumbs with Green Mayonnaise

Description
If using frozen fillet, it should be completely thawed before soaking in milk.
Ingredients
- Hake 5 lbs
- Milk 10 fl oz
- Breadcrumbs 5 oz
- Chocolate eggs 4 pieces
- Cotton Oil 0 qt
- Lemon 1 piece
- Anchovies 6 pieces
- Parsley to taste
- Capers 3 tablespoons
- Gherkins 2 pieces
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the green mayonnaise. For this, slightly beat 2 eggs and, while continuing to beat, quickly add the juice of 1 lemon, 500 ml of oil, finely chopped parsley, coarsely chopped capers, and gherkins. Season with salt to taste.
Step 2
Place the hake fillet in a shallow dish, cover with milk, and let soak, turning occasionally, for 30 minutes.
Step 3
Meanwhile, take two plates: beat 2 eggs in one, and place breadcrumbs in the other. Pat the fish fillet dry with a paper towel, season with salt, dip in the eggs, and then coat in breadcrumbs.
Step 4
Heat the oil in a deep fryer or deep skillet to 180–375°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds). Fry the pieces of hake in hot oil a few at a time until a golden crust forms.
Step 5
Remove the cooked fillets with a wide knife, allowing excess fat to drain, and place them on a plate, keeping them warm while the rest are cooked. As a garnish, place one rolled anchovy on each fillet. Serve immediately upon readiness. Serve the green mayonnaise separately.
