Gumbo with Shrimp, Crab Meat, and Bacon
Ingredients
- Bacon 10 oz
- Wheat Flour ¾ cup
- Vegetable Oil ½ cup
- Celery stalk 2 pieces
- Orange Bell Peppers 1 piece
- Garlic 5 cloves
- Chicken Broth 5 qt
- Okra 15 oz
- Baking Tomatoes 15 oz
- Chopped Sage Leaves 1 teaspoon
- Bay leaf 1 piece
- Cayenne Pepper 1 teaspoon
- Chopped Sage Leaves ½ cup
- Spanish onions 3 heads
- Peeled Cooked Shrimp 25 oz
- Crab Meat 15 oz
- Salt to taste
Step-by-Step Guide
Step 1
Finely chop the onions, garlic, celery, bell pepper, and okra. Crush the tomatoes, draining off the liquid.
Step 2
Slice the bacon into thin strips and fry it in a heavy (preferably cast iron) skillet over medium heat until browned. Use a slotted spatula to transfer it to a bowl.
Step 3
Pour vegetable oil into the skillet with the bacon fat, add the flour, stir, and cook over low heat, stirring constantly, for about 20 minutes.
Step 4
When the flour and oil mixture turns a deep brown color, add the celery, bell pepper, 1/3 of the onions, and garlic. Cook until the vegetables are soft, about 15 minutes.
Step 5
Transfer the vegetables from the skillet to a large pot (6-7 liters). Add the chicken broth, crushed tomatoes, okra, thyme, bay leaf, cayenne pepper, salt (2 teaspoons), and simmer over medium heat, stirring occasionally, for about half an hour.
Step 6
When the vegetables are very tender, add the parsley, remaining onions, shrimp, and cook, stirring, for about 5 minutes.
Step 7
Add the crab meat in pieces and the bacon to the pot. Cook, stirring, for another minute, and season with salt to taste.
Step 8
Serve in deep bowls, removing the bay leaf from the gumbo beforehand.
