Grilled Summer Vegetables
Ingredients
- Fresh Red Bell Peppers 4 pieces
- Eggplants 3 pieces
- Zucchini 3 pieces
- Red Onions 4 heads
- Chopped Parsley 0 oz
- Garlic 2 cloves
- Red Wine Vinegar 5 tablespoons
- Olive Oil 5 fl oz
Step-by-Step Guide
Step 1
In a large bowl, mix the spices and all the ingredients for the dressing.
Step 2
Heat the grill pan. Sear the peppers on all sides. Place them in a bowl and cover with a plate until cool.
Step 3
Grill the remaining vegetables on each side until they are soft. Once ready, immediately add them to the dressing, separating the onions into rings. Peel the peppers and slice them into strips.
Step 4
Mix with the other vegetables, then strain the juice. Let everything cool, then add salt.
Step 5
The dish can be stored in the refrigerator for up to 2 days, but it should be taken out a few hours before serving. Then add the chopped parsley and garlic.
