Grilled Stuffed Chicken Breast with Green Rice
Ingredients
- Potato 1 piece
- Chicken fillet 2 pieces
- Rice 5 oz
- Melted Cheese 0 oz
- Pesto 1 tablespoon
- Cilantro 1 tablespoon
- Pistachios 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 1 tablespoon
Step-by-Step Guide
Step 1
Rinse the rice and soak it in warm water for 15 minutes. Then cook until done.
Step 2
Wash the chicken fillet and dry it with a paper towel. Place it on a hot grill pan. Sear for 4-5 minutes on each side until a golden crispy crust forms.
Step 3
Carefully take the hot fillet with tongs, make cuts in the thick part (to create pockets), and fill the pockets with sliced mozzarella and tomatoes. Return it to the grill pan, reduce the heat, and keep it on the pan until the cheese melts.
Step 4
Mix the cooked rice with pesto sauce and chopped cilantro. Add salt to taste.
Step 5
Toast the pine nuts for a couple of minutes in a hot pan, and use them to garnish the rice. They will enhance the dish's flavor.
Step 6
Season the chicken fillet with salt and pepper and serve it with rice and tomatoes.
