Ingredients

  • Squid 14 pieces
  • Long-Grain Rice 2 cups
  • Chicken Broth 4 cups
  • Olive Oil 3 tablespoons
  • Garlic 8 cloves
  • Ginger 0 oz
  • Onion 1 piece
  • Orange Bell Peppers 1 piece
  • Potato 1 piece
  • Salt to taste
  • Ground Black Pepper to taste
  • Cilantro ½ bunch

Step-by-Step Guide

Step 1

Take small squid, clean and remove the insides, rinse.

Step 2

Pour olive oil into a pan, heat it up, and lightly sauté thinly sliced garlic and ginger.

Step 3

Add finely chopped onion and bell pepper, sauté lightly, and then add the rice.

Step 4

Fry, stirring for a couple of minutes, and add finely chopped tomatoes.

Step 5

Lightly sauté and pour in the chicken broth. Bring to a boil, reduce to the lowest heat, cover, and wait for 20 minutes.

Step 6

After 20 minutes, turn off the heat and add chopped cilantro, mix, and cover again.

Step 7

Let it cool, lightly salt the squid bodies, and fill them with rice. Secure the ends with a toothpick.

Step 8

Sprinkle the stuffed squid with olive oil and place them on the preheated grill rack.

Step 9

Grill at a low temperature for 30–35 minutes, remembering to turn them occasionally.

Step 10

Remove the grilled squid, cover, and let them rest for 10–15 minutes.

Step 11

Serve hot, lightly drizzled with pepper sauce, and garnish with pickles.
