Ingredients
- Scallops 20 oz
- Olive Oil 0.3 cups
- Salt ¾ teaspoon
- Ground Black Pepper ½ teaspoon
- Champagne Vinegar 4 teaspoons
- Fresh basil leaves 0 oz
- Mixed salad greens 10 oz
- Parsley 0 oz
- Mint Leaves 0 oz
- Chives 0 oz
- Capers 4 teaspoons
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Place the scallops in a bowl and add 1 tablespoon of olive oil, 0.25 teaspoon of salt, and 0.25 teaspoon of pepper. Mix well.
Step 3
In a large bowl, combine the vinegar, remaining salt and pepper, and slowly whisk in the olive oil.
Step 4
Place the scallops on the grill and cook for about 2-3 minutes on each side until done.
Step 5
Add the salad greens, basil leaves, parsley, mint, and chopped chives to the dressing. Mix well and plate. Top with the scallops and sprinkle with capers.
