
Grilled Salmon with Roasted Tomato Salsa

Ingredients
- Tomatoes 4 pieces
- Habanero Pepper 2 pieces
- Habanero Pepper 2 pieces
- Onion 1 head
- Chopped Green Onions ¼ cup
- Olive Oil 2 teaspoons
- Salt ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Salmon bellies 6 pieces
- Thyme to taste
Step-by-Step Guide
Step 1
Preheat the grill.
Step 2
Place the tomatoes, peppers, and a small onion on the grill and roast for about 5 minutes, until the tomatoes are soft and the onion's skin begins to char.
Step 3
Remove the insides of the tomatoes and chop them finely. Transfer to a bowl and add the chopped peppers and onion. Then add the cilantro, olive oil, salt, and pepper. Gently mix.
Step 4
Place the fish on the grill and cook, turning, for 10 minutes until done. Serve on plates and top each piece with 2 tablespoons of salsa. Garnish with thyme sprigs and serve.
