  • Brown Sugar ½ cup
  • Dry White Wine ½ cup
  • Salt ½ teaspoon
  • Meyer Lemon Juice ¼ cup
  • Ground Black Pepper ¼ teaspoon
  • Smoked haddock fillet 8 pieces
  • Butter 0 oz
  • Lemon 2 pieces

Step-by-Step Guide

Step 1

In a bowl, mix the sugar, wine, lemon juice, salt, and pepper until the sugar dissolves.

Step 2

Rinse the fish under cold water and pat dry with a paper towel. Place in the marinade, stir, cover with plastic wrap, and let sit for 1.5 to 2 hours.

Step 3

Remove the fish from the marinade and transfer to a skillet. Pour the marinade over, add the butter, and place over medium heat until the butter melts. Cook for 4-5 minutes.

Step 4

Preheat the grill. Place the fish on the grill rack and brush with the marinade. Grill for 3.5-4 minutes until golden brown. Carefully flip the fish with a spatula, brush with the marinade, and grill for another 5-6 minutes, brushing with the marinade, until the fish is cooked but still slightly rare inside.

Step 5

Transfer the fish to plates and garnish with lemon wedges. Season with salt and pepper to taste.
