Ingredients

  • Salt to taste
  • Pork Blood 10 oz
  • Olive Oil 2 tablespoons
  • Lemon-Pepper Mix 0 oz

Step-by-Step Guide

Step 1

Cut the meat into portion-sized pieces about 1.5–2 cm thick.

Step 2

Crush the pepper mix (red, black, white, green, allspice), or simply black and allspice pepper, in a mortar or by any convenient method.

Step 3

Rub the meat with the pepper mix and olive oil. Let it sit for 15–20 minutes.

Step 4

Preheat a grill pan (or a regular one, adding a little oil to it).

Step 5

Optionally, you can remove the pepper pieces from the meat; I did so, as they imparted their aroma but are not very pleasant to chew, but it's up to your preference.

Step 6

Lightly salt the meat and place it in the pan. Sear on both sides until a nice crust forms.
