Grilled Pork with Peaches
Ingredients
- Pork tenderloin 4 pieces
- Lime Juice 2 tablespoons
- Balsamic Vinegar ¼ cup
- Salt ½ teaspoon
- Chopped Sage Leaves 2 teaspoons
- Ground Black Pepper ½ teaspoon
- Donut Peaches 4 pieces
- Arugula 15 oz
- Brown Sugar 1 teaspoon
Step-by-Step Guide
Step 1
Pound the pieces of meat between 2 sheets of plastic wrap until thin.
Step 2
In a bowl, mix 2 tablespoons of vinegar, lime juice, thyme, salt, and pepper. Pour 1 tablespoon of the mixture into a cup, and transfer the remaining marinade into a plastic bag, add the meat, mix well, and seal the bag tightly. Refrigerate for 1 hour, turning occasionally.

Preheat the grill.
Step 4
Peel the peaches and cut them in half. Place them cut-side up on a plate and drizzle with the remaining vinegar.
Step 5
Place the meat on a greased grill and cook for 3 minutes on each side until done. Transfer to a board and keep warm.
Step 6
Place the peaches cut-side down on the grill and cook for 4 minutes until slightly browned. Flip and grill for another 2 minutes. Transfer to a board.
Step 7
Slice the meat into small strips and cut each peach half into 4 wedges.
Step 8
Drizzle the arugula with the remaining tablespoon of marinade, toss, and divide onto plates. Top with the meat and peaches. Sprinkle with sugar and serve.
