Ingredients
- Salt 1 teaspoon
- Grated Ginger Root 2 tablespoons
- Ground Black Pepper 1 teaspoon
- Chili Flakes ½ teaspoon
- Pork Skewers 5 lbs
- Lime 2 pieces
- Barbecue sauce to taste
Step-by-Step Guide
Step 1
In a small bowl, mix the ginger, salt, pepper, and red pepper flakes.

Rinse the ribs well under cold water and pat dry. Cut the limes in half and rub the juice over the ribs on both sides. Rub the ribs with the ginger mixture, wrap in plastic wrap or place in a bag, and refrigerate for 8 hours. Remove from the refrigerator and let sit at room temperature for 30 minutes.

Preheat the grill.

Place the ribs on the grill and cook for 40 minutes. Then brush the ribs with the sauce and cook for another 30 minutes, occasionally brushing with sauce. Transfer the ribs to a plate, cover with foil, and let rest for 10 minutes. Slice and serve with the remaining sauce.
