Grilled Pork Ribs in Apricot Marinade
Ingredients
- Pork Skewers 5 lbs
- Pineapple 5 oz
- Canned Peaches 20 oz
- Brown Sugar ¼ cup
- Vinegar essence 3 tablespoons
- Soy Sauce 1 tablespoon
- Apricot Jam ¼ cup
- Ground Cinnamon 2 teaspoons
- Grated Ginger Root ½ teaspoon
Step-by-Step Guide
Step 1
In a blender, puree the apricots. Transfer to a saucepan and add finely chopped pineapple, brandy, sugar, vinegar, soy sauce, cinnamon, and ginger. Bring to a boil, reduce heat, and simmer for 5 minutes. Let cool.
Step 2
Place the ribs in a large bowl and pour the apricot marinade over them. Mix well, cover with plastic wrap, and refrigerate overnight, stirring occasionally.
Step 3
Preheat the grill.
Step 4
Place the ribs on the grill and cook for 15-20 minutes until done, basting with the remaining marinade.
