Description

Cooking at an angle creates a beautiful pattern on the pieces. I recommend using a meat thermometer. The temperature for medium-cooked meat should be 70 degrees Celsius.

Ingredients

  • Pork tenderloin 3 pieces
  • Semi-Smoked Sausage 3 pieces
  • Pepperoni 6 slices
  • Pickles 6 slices
  • 50% Fat 'Lambert' Cheese 3 slices
  • Fresh basil leaves 6 pieces
  • Ocean salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Make pockets in the pieces of loin, placing 2 slices of pepperoni, 1 piece of bacon, 1 slice of cheese, and 2 slices of pickle in each pocket. Secure each pocket with two toothpicks (the meat should be about 2–2.5 cm thick).

Step 2

Sprinkle salt and pepper on the top and bottom of the loin, and place a basil leaf on each side.

Step 3

Place the pieces diagonally on a very hot grill in one direction. After 2 minutes, place them diagonally in the other direction for another 2 minutes. If the edges start to brown, flip the piece to the other side and change directions similarly (each side cooks for about 4–7 minutes, depending on the grill).
