
Grilled Partridges in Raspberry-Mint Marinade

Partridges should weigh about 450 grams each.
Ingredients
- Vinegar essence 1 cup
- Raspberry leaves 5 oz
- Meyer Lemon Juice 2 tablespoons
- Fresh Mint 2 tablespoons
- Minced garlic 1 teaspoon
- Olive Oil ½ cup
- Pheasant 4 pieces
Step-by-Step Guide
Step 1
In a bowl, mix the raspberries, vinegar, lemon juice, garlic, chopped mint, and olive oil. Slightly crush the raspberries.
Step 2
Place the partridges, cut in half and spread out, in a dish and pour the marinade over them. Cover with plastic wrap and refrigerate for 4 hours.
Step 3
Preheat the grill or barbecue.
Step 4
Place the partridges on the oiled grill, skin side down, and grill for 10 minutes. Turn them over and grill for another 20-25 minutes, brushing with marinade, until cooked through.
