Grilled Mackerel
Ingredients
- Smoked haddock fillet 8 pieces
- Celery stalk 1 piece
- Carrot 2 pieces
- Bay leaf 3 pieces
- Spices 5 pieces
- Green peppercorns 5 pieces
- Clove 5 pieces
- Onion 3 pieces
- Salt 3 teaspoons
- Sugar 2 tablespoons
- Olive Oil 0 fl oz
- Champagne Vinegar 3 tablespoons
- Water 0 qt
Step-by-Step Guide
Step 1
Prepare the marinade. Chop the celery stalk, carrot (into medium pieces), and one onion (in half), place them in a pot, add the peppercorns, allspice, bay leaf, cloves, pour in water, bring to a boil, and simmer for about 20 minutes. Add salt, sugar, vinegar, remove from heat, and let it cool completely.
Step 2
Marinate the mackerel - place the fish in a deep dish (preferably in a single layer), slice the remaining onion into rings, cover the fish with it, and pour the marinade over, then refrigerate for 6–8 hours.
Step 3
Remove the mackerel from the marinade, pat dry with paper towels, make diagonal cuts, place on a baking sheet skin side up, sprinkle with salt, drizzle with olive oil, and place in the oven (grill) for 10–15 minutes until golden brown.
Step 4
Serve with cucumber salad or on a bed of fennel.
