Description
Young and flexible sprigs of rosemary work beautifully instead of garlic stalks. I expected the garlic to stay on the meat during cooking, but that didn't happen. I will consider the result conditionally successful.
Ingredients
- Coriander essential oil ½ teaspoon
- Pork chop with bone 3 pieces
- Wild Garlic Greens 3 pieces
- Mustard Greens ½ teaspoon
- Green peppercorns ½ teaspoon
- Olive Oil 5 tablespoons

Step 1
Wrap the lamb chops with garlic stalks, securing them with toothpicks.
Step 2
Crush the spices in a mortar, mix with the oil. Coat the meat with the mixture and let it sit for 10–20 minutes.
Step 3
Heat the grill or a ridged skillet very well. Sear on each side for 2–3 minutes.
