Grilled Herring with Mustard Sauce
Ingredients
- Olive Oil 2 tablespoons
- Herring 6 pieces
- Salt to taste
- Butter 5 oz
- Wheat Flour 1 tablespoon
- Whole egg 2 pieces
- Mustard Greens 1½ tablespoons
Step-by-Step Guide
Step 1
Preheat the grill. Clean and gut the herring, lightly salt the inside and outside. Thoroughly brush the inside with olive oil, then make two cuts on the outside with a sharp knife and brush it as well. Carefully shape the fish back into its original form and place them on the grill rack. Cook for 15–20 minutes, until the flesh easily separates from the bone.
Step 2
To prepare the mustard sauce, melt the butter in a saucepan. Add the flour and keep it on the heat for a couple more minutes, stirring continuously. Gradually, in small portions, pour in hot water (250 ml). Cook for another 10 minutes, continuing to stir, until thickened. Remove the saucepan from the heat and add the egg yolks one at a time, then add the mustard and salt to taste.
Step 3
Place the cooked fish on a plate and serve with the mustard sauce.
