Grilled halibut with a relish made from yellow tomatoes, red onion, and dill.
Ingredients
- Mixed tomatoes of different colors 3 pieces
- Spanish onions ½ head
- Habanero Pepper ½ piece
- Dill 1 teaspoon
- Meyer Lemon Juice 2 teaspoons
- Ocean salt ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Halibut 6 pieces
- Olive Oil 1 tablespoon

Preheat the grill.
Step 2
In a small bowl, mix finely chopped tomatoes, finely chopped red onion, minced jalapeño, finely chopped dill, and lemon juice. Add half of the salt and pepper. Gently mix everything together.
Step 3
Brush the fish with olive oil and sprinkle with the remaining salt and pepper. Place on the oiled grill and cook for 2 minutes on each side until done. Transfer to plates and top with a small amount of the tomato relish.
