Grilled Dorado with Peach, Mint, and Pink Grapefruit Sauce
Ingredients
- Rice Vinegar for Sushi 0.3 cups
- Brown Sugar 2 tablespoons
- Donut Peaches 25 oz
- Spanish onions 5 oz
- Grapefruits 2 pieces
- Mint Leaves 0 oz
- Salt ¾ teaspoon
- Ground Black Pepper ½ teaspoon
- Vegetable Oil to taste
- Skin-on dorado fillet 6 pieces
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
In a small saucepan, combine the vinegar and sugar and bring to a boil. Remove from heat.
Step 3
In a large bowl, place the finely chopped red onion and pour the hot vinegar over it. Stir and let it cool. Add the peeled and diced peaches, the peeled and segmented grapefruits, mint, 0.25 teaspoon of salt, and pepper. Gently mix.
Step 4
Season the fish with salt and pepper, place it on an oiled grill, and cook for about 5 minutes on each side until done.
Step 5
On plates, arrange the fruit sauce and place a piece of fish on top.
