Grilled Chicken with Vegetables and Pesto
Ingredients
- Skin-On Chicken Breasts 4 pieces
- Pesto 3 tablespoons
- Water 3 tablespoons
- Onion 1 head
- Orange Bell Peppers 1 piece
- Olive Oil 2 tablespoons
- Potato 1 piece
- Salt to taste
- Melted Cheese 4 pieces
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill pan. Dip the onion rings and pieces of bell pepper in olive oil and grill them until cooked.
Step 2
Pour the remaining oil into the pan and fry the chicken breast and tomato slices on both sides. Season with salt and pepper.
Step 3
Preheat the oven to 300°F (300 degrees Fahrenheit). Arrange the onion first, then the bell pepper, chicken, and top with mozzarella slices on a baking sheet. Place in the preheated oven for a few minutes until the cheese melts.
Step 4
Serve with pesto.
