Grilled Chicken with Spicy Couscous
Ingredients
- Couscous 5 oz
- Olive Oil 1 tablespoon
- Onion 1 head
- Courgette 2 pieces
- Red Long Chili Peppers ½ piece
- Sun-Dried Tomatoes 12 pieces
- Orange zest ½ tablespoon
- Orange juice concentrate 10 fl oz
- Fresh Mint 8 tablespoons
- Skin-On Chicken Breasts 4 pieces
- Butter 2 tablespoons
- Spices to taste
Step-by-Step Guide

Preheat the grill.
Step 2
In a pot, bring 500 ml of water to a boil and add the couscous. Remove from heat and let it sit for 10 minutes.
Step 3
Heat the olive oil in a pan and sauté the finely chopped onion and zucchini until golden. Add the chopped pepper and tomatoes, mix well, and add the couscous. Then add the grated zest, a third of the juice, and the chopped mint.
Step 4
Place the chicken in a single layer in a baking dish, crumble the butter on top. Drizzle with the remaining juice and season with spices. Place under the grill for 8-10 minutes, turning once, until golden and crispy.
Step 5
On plates, serve the couscous topped with the chicken, drizzled with the juices.
