  • Coarse Salt 1 tablespoon
  • Ground Black Pepper 1 teaspoon
  • Poultry 5 lbs

Step-by-Step Guide

Step 1

Preheat the grill.

Step 2

In a small bowl, mix the salt and pepper. Generously rub the chicken, cut into 4 parts, with the mixture— you may not need all of it— and let it sit at room temperature for 30 minutes.

Step 3

Place the pieces of chicken on the grill, skin side down, and cook until done, turning occasionally, for about 15 minutes.

Step 4

Transfer the chicken to a platter and let it rest for 15 minutes. Serve with the bread salad (see note).
