- Rosemary 2 spoons
- Thyme 2 spoons
- Garlic 4 cloves
- Dried Chili Pepper 1 tablespoon

- Skin-On Chicken Breasts 30 oz
- Spanish onions 2 pieces
- Red Grape Juice ¾ glasses
- Champagne Vinegar ½ glasses
- Sugar ½ glasses
- Chambord Liqueur ¼ glasses
Step-by-Step Guide
Step 1
Combine olive oil, finely chopped parsley, basil, rosemary, thyme, chili, and garlic with the zest and juice of one lemon in a vacuum-sealed bag. Add the chicken fillet to the marinade, seal the bag, and refrigerate for several hours (or overnight).
Step 2
To prepare the jam, melt the butter in a saucepan over medium heat. Add the thinly sliced onion and sauté until soft, about fifteen minutes, making sure it does not turn brown. Add the wine, vinegar, liqueur, sugar, salt, and pepper to taste. Cook the jam until thickened, about forty minutes, then allow to cool.
Step 3
Preheat the grill. Place the fillet on it and grill, turning once, until a golden crust forms, about five minutes. Serve with jam.
