Grilled Chicken with Pumpkin Seed Sauce
Ingredients
- Cilantro 0 oz
- Olive Oil 2 tablespoons
- Onion 0 oz
- Garlic 1 clove
- Habanero Pepper 1 piece
- Shelled pumpkin seeds 0 oz
- Banana Leaves 0 oz
- Coarse Salt to taste
- Champagne Vinegar 1 tablespoon
- Ground Black Pepper to taste
- Chicken fillet 4 pieces
Step-by-Step Guide
Step 1
Heat 1 tablespoon of olive oil in a saucepan over medium heat. Add finely chopped onion, minced garlic, and chopped, seeded jalapeño pepper. Sauté, stirring, until softened, about 5–8 minutes.
Step 2
Add the pumpkin seeds and sauté for another 5 minutes. Then add finely chopped lettuce and vinegar, 1 cup of water, and season with salt. Bring to a boil, reduce heat, and cook covered for about 10 minutes until the lettuce is tender.
Step 3
Transfer the mixture to a blender and add the cilantro. Blend until smooth. If necessary, add a little water to achieve the desired consistency.
Step 4
Meanwhile, preheat the grill.

Brush the chicken breasts with the remaining oil and generously season with salt and pepper. Place on the grill and cook for 6–8 minutes on each side until cooked through.

Transfer the chicken to plates, slice, drizzle with sauce, and serve.
