Ingredients

  • Dried Rosemary 2 tablespoons
  • Olive Oil ¼ cup
  • Garlic 2 cloves
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Poultry 65 oz
  • Meyer Lemon Juice ¼ cup

Step-by-Step Guide

Step 1

In a small saucepan, combine 0.3 cups of water and finely chopped rosemary. Bring to a boil, remove from heat, cover, and let sit for 5 minutes. Pour into a blender and add olive oil and minced garlic. Season with salt and pepper and blend until smooth.

Step 2

Cut the chicken into 8–10 pieces and transfer to a bowl. Pour the rosemary oil over the chicken, mix well, and refrigerate overnight, stirring occasionally.

Step 3

Preheat the grill or barbecue.

Step 4

Place the chicken pieces on the grill and cook, brushing with lemon juice, until done, about 20–30 minutes. Serve with grilled zucchini and pumpkin (see note).
