Grilled Chicken with Hawaiian Pineapple
Ingredients
- Skin-On Chicken Breasts 6 pieces
- Soy Sauce 10 fl oz
- Peach Juice 10 fl oz
- Vegetable Oil 2 tablespoons
- Brown Sugar 2 tablespoons
- Garlic 2 cloves
- Grated Ginger Root 2 teaspoons
- English Dry Mustard 1 teaspoon
- Rice 0 qt
- Canned Pineapple Chunks 6 pieces
Step-by-Step Guide
Step 1
Place a pot on the stove and mix the soy sauce, pineapple juice, oil, brown sugar, garlic, ginger, and dry mustard.
Step 2
Bring to a boil. Reduce heat and simmer for 5 minutes. Allow the marinade to cool.
Step 3
Flatten the chicken breasts.
Step 4
Set aside 120 ml of the marinade. Place the chicken breasts in a shallow glass dish or plastic bag and pour the prepared marinade over them.
Step 5
Cover and let marinate for at least 2-3 hours, or overnight, turning occasionally.
Step 6
Grill over medium heat for about 6 minutes on each side, basting with the remaining marinade. Grill until cooked through.
Step 7
When the chicken is done, dip the pineapple rings in the marinade and grill on both sides.
Step 8
Place the pineapples on top of the chicken and serve with rice.
