Grilled Chicken in Raspberry Marinade
Ingredients
- Skin-On Chicken Breasts 2 pieces
- Frozen Raspberries 10 oz
- Raspberry leaves 1 cup
- Olive Oil ½ cup
- Bay leaf 2 pieces
- Salt to taste
- Dried Chamomile 1 tablespoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a saucepan, combine raspberries and vinegar. Bring to a boil and remove from heat. Add olive oil, bay leaves, and thyme. Let cool to room temperature.
Step 2
Cut the chicken breasts in half and add to the marinade. Mix well, cover with plastic wrap, and refrigerate overnight, stirring occasionally.
Step 3
Preheat the grill or barbecue.
Step 4
Place the chicken on an oiled grill and cook until done, turning and basting with the marinade.
