Grilled Chicken in Lemon Marinade with Oregano and Grilled Lemons

Ingredients
- Fresh basil leaves ¼ cup
- Grated Lemon Zest 1 tablespoon
- Meyer Lemon Juice 5 fl oz
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Poultry 2 pieces
- Lemon 4 pieces
- Oregano 8 sprigs
Step-by-Step Guide
Step 1
In a small bowl, mix the lemon juice and zest, oregano, olive oil, 2 teaspoons of coarse salt, and 1 teaspoon of pepper. Place the halved chickens in a bag and pour the marinade over them. Toss to coat and let sit at room temperature for 30 minutes, occasionally turning.

Preheat the grill.
Step 3
Remove the chicken from the marinade and pat dry with paper towels. Place on the grill, skin side down, and cook until done, turning occasionally.
Step 4
Transfer to a cutting board and wrap in foil. Let rest for 10 minutes.
Step 5
Meanwhile, place the lemon halves on the grill, cut side down, and grill until slightly charred, about 8–10 minutes.
Step 6
Cut the chicken pieces in half and serve with the grilled lemons, garnished with oregano sprigs.
