Description
Recipe taken from the magazine 'Culinary Practice'.
Ingredients
- Poultry 1 piece
- Vegetable Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Paprika to taste
- Ground Dried Garlic to taste
- Poultry to taste
Step-by-Step Guide
Step 1
Rinse the chicken and pat it dry.
Step 2
Turn the chicken breast side down and use a sharp knife to cut along the back, breaking the bones. Flip the chicken over and, pressing down on it with your hands, open it like a book. Optionally, you can lightly pound the chicken with a meat mallet or make cuts on the thighs and drumsticks.
Step 3
Rub the chicken all over with your favorite spices. Let it marinate for 2–3 hours at room temperature or overnight (in this case, place the chicken in the refrigerator).
Step 4
Grease the grill with a small amount of vegetable oil (you can lay foil on top), then place the chicken cut side down over the heat.
Step 5
Cook the chicken, turning it at least every 15 minutes. To check for doneness, cut into the thickest part of the chicken: if the meat is white and pulls away from the bones easily, the chicken is ready.
Step 6
Remove the chicken from the grill and let it rest for 7–10 minutes before serving.
Step 7
Carve the cooked chicken into serving pieces and serve with any side of vegetables, either fresh or roasted.
