Grilled Beef Tenderloin

Step-by-Step Guide
Step 1
Place the bell pepper and peeled onion on the grill over the coals and cook on low heat for 20–30 minutes, turning occasionally to prevent burning. The vegetables should be roasted on all sides. Then, remove the seeds and skin from the pepper, cut it into 4–6 pieces, and slice the onion into thicker rings.
Step 2
Trim the beef tenderloin of membranes, heads, and silverskin. Cut it in half lengthwise, but do not cut all the way through; we need to open it like a butterfly. Season with salt and pepper on all sides, and add the herb leaves.
Step 3
Inside the opened tenderloin, place the chopped vegetables and slices of cheddar cheese, then close it and tightly tie it with kitchen twine around the entire perimeter (the vegetables and cheese should be inside).
Step 4
The coals in the grill are ready; clean the grill grate, brush it with olive oil, and also brush the tenderloin with oil before placing it on the grill. Grill for about 20–25 minutes on all sides. Then transfer it to a tray and let the meat rest for about 7 minutes, then remove the twine and slice. Arrange on a serving platter.
