Green Beans in Egg Sauce
Ingredients
- Olive Oil 5 fl oz
- Chinese green beans 5 lbs
- Wheat Flour 0 oz
- Egg white 2 pieces
- Champagne Vinegar 0 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
If the beans are too long and wide, cut the pods lengthwise and crosswise. Heat the oil in a pot, add the beans, and cook, stirring, for 5 minutes. Stir in the flour and cook, stirring constantly, for another 2 minutes. Add cold water to cover all the contents of the pot. Season with salt and cook uncovered for 15-20 minutes, until the beans are tender.
Step 2
Beat the yolks with the vinegar, then gradually stir in a few tablespoons of the cooking liquid from the beans. Remove the pot from the heat, mix in the egg mixture, and serve immediately.
