  • Olive Oil 1 cup
  • Cumin Seeds 2 teaspoons
  • Garlic 4 cloves
  • Onion 1 head
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Tomato Paste 2 tablespoons
  • Paprika 1 tablespoon
  • Green Beans 25 oz
  • Canned tomatoes 30 oz
  • Canned chickpeas 15 oz

Step-by-Step Guide

Step 1

Heat the oil in a large skillet over medium heat; add the cumin and sauté, stirring frequently, until fragrant, about 1 minute.

Step 2

Add the onion and garlic, season with salt and pepper, and sauté for about 12 minutes, stirring often, until softened and golden.

Step 3

Add the tomato paste and paprika; sauté, stirring occasionally, until lightly caramelized (about 2 minutes).

Step 4

Add the green beans, tomatoes, chickpeas, and 3 cups of water and bring to a boil. Reduce the heat to medium and simmer covered for about 1 hour, stirring occasionally, until the chickpeas are tender. Let sit for at least 15 minutes before serving.
