Greek Style Roasted Lamb with Potatoes and Olives

Ingredients

  • Olive Oil 1 tablespoon
  • Lamb Neck Fillet 0 lbs
  • Oregano 5 sprigs
  • Lemon 1 piece
  • Spanish onions 1 head
  • New Potatoes 20 oz
  • Garlic 3 cloves
  • Dry White Wine 0.3 cups
  • Chicken Broth 0.3 cups
  • Kalamata olives ½ cup

Step-by-Step Guide

Step 1

Preheat the oven to 320°F.

Step 2

Heat the olive oil in a skillet over medium heat. Add the lamb and sear for 2 minutes on each side until golden brown. Transfer to a baking dish.

Step 3

In a small bowl, combine the sliced lemon, roughly chopped onion, halved potatoes, minced garlic, wine, broth, and 4 sprigs of oregano. Season with pepper, transfer to the meat, cover with foil, and bake for 2 hours.

Step 4

Remove the foil, baste the meat with the juices, and add the olives.

Step 5

Increase the temperature to 355°F and roast for another 15 minutes until the potatoes are golden.

Step 6

Transfer the meat to a plate, cover with foil, and let it rest for 10 minutes. Cut into pieces.

Step 7

Serve the meat and potatoes on plates and sprinkle with the remaining oregano leaves.
