Ingredients
- Eggplants 5 oz
- Wheat Flour 1 tablespoon
- Scallions to taste
- Spinach 0 oz
- Vegetable Oil 4 spoons
- Tomatoes 1 piece
- Corn Salad to taste
- Salt to taste
- Sweet Pepper 1 piece
Step-by-Step Guide
Step 1
Peel the eggplants and cut them into 1-centimeter thick slices. Dredge each slice in flour and fry them in hot vegetable oil.
Step 2
Chop the green onions, spinach, bell peppers, parsley, and tomatoes, season with salt, and sauté in vegetable oil over medium heat for 5 minutes.
Step 3
Place the eggplants in a baking dish. Pour the sautéed vegetable mixture over them and bake in the oven for 10–15 minutes. Garnish with chopped herbs and serve cold.
