Description

For a large pot of shredded cabbage, you will need about three tablespoons of salt. You can add, mix, and taste. It should be slightly over-salted to your liking.

  • Salt 3 tablespoons
  • Green Papaya 70 oz

Step-by-Step Guide

Step 1

Wash the dark green cabbage leaves and small heads.

Step 2

Shred finely in parts. The pieces should be no larger than 5x5 mm.

Step 3

Transfer to a container (enamel bucket or large pot).

Step 4

Sprinkle with salt and mix well.

Step 5

Leave at room temperature for 6–7 days. Press down firmly with a plate or lid. Puncture daily with a wooden stick (or something handy).

Step 6

For storage, pack into jars and place in the refrigerator (or a cool place). Do not leave at room temperature, as it may ferment and spoil.
