Ingredients

  • Cauliflower 4 pieces
  • Olive Oil to taste
  • Onion 2 heads
  • Bay leaves 3 pieces
  • Butter 0 oz
  • Wheat Flour 0 oz
  • Dry Mustard 1 teaspoon
  • Milk 10 fl oz
  • Grated Gruyère cheese 5 oz
  • Grated Emmental cheese 5 oz
  • Grated Parmesan cheese 0 oz
  • Ground Nutmeg to taste
  • Ground White Pepper to taste
  • 40% Cream 5 fl oz

Step-by-Step Guide

Step 1

Preheat the oven to 200°C (392°F) and bring a large pot of salted water to a boil. Place the whole heads of cauliflower in the water, bring to a boil, and cook for 3 minutes. Drain the water and let them dry for a few minutes. Then, brush the heads with 1 tablespoon of oil and bake for 30 minutes. Place on a baking sheet.

Step 2

Place the onion, bay leaves, and butter in a skillet, add a little salt, and sauté until soft and golden. Add the flour and mustard powder, mix well, gradually pour in the milk, and stir until it reaches a sauce consistency. Let it simmer on low heat for 4-5 minutes until thickened, then add the cream and bring to a boil, stirring. Remove from heat, add the Gruyère, Emmental, and 2/3 of the Parmesan, and stir until the cheese melts. Add nutmeg, white pepper, and salt. Place on low heat if the cheese hasn't fully melted. Pour the mixture over the cauliflower. Store in the refrigerator for up to 2 days.

Step 3

Before serving, place in an oven preheated to 220°C (428°F), sprinkle with the remaining Parmesan, nutmeg, and bake for 20 minutes until the mixture is bubbling and golden brown.
