Ingredients

  • Salad Potatoes 0 lbs
  • Scorpion fish fillet 4 pieces
  • Olive Oil 2 tablespoons
  • Coarse Salt ½ teaspoon
  • Ground Black Pepper ½ teaspoon
  • Low-fat lactose-free milk 5 fl oz
  • Coarse Cornmeal 5 fl oz
  • Paprika ¼ teaspoon
  • Lemon 1 piece
  • Malt Vinegar to taste

Step-by-Step Guide

Step 1

Preheat the oven to 445°F.

Step 2

Peel the potatoes and cut them into strips. Rinse well under cold running water and dry with a towel. Spread them in a single layer on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with ¼ teaspoon of salt and pepper. Mix well and flatten. Bake in the oven for 30 minutes until golden brown.

Step 3

Meanwhile, place the fish fillets in a large bowl. Add the buttermilk and gently coat the fish. In another bowl, combine the cornmeal, paprika, and remaining salt and pepper. Dredge the pieces of fish in the coating and shake off the excess.

Step 4

Heat a large skillet over high heat. Add the remaining olive oil and place the fish in the skillet. Fry for about a minute until golden brown, then carefully flip and transfer to the oven for about 8 minutes until the fish is cooked through.

Step 5

Serve the fish with the fries, garnished with lemon wedges and drizzled with vinegar.
