Golden Chicken with Apples, Onions, and Sage
Ingredients
- Poultry 1 piece
- Apple 3 pieces
- Spanish onions 2 heads
- Butter 4 spoons
- Chopped Sage Leaves to taste
- Ocean salt to taste
- Ground Black Pepper to taste
- Meyer Lemon Juice 2 spoons
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
In a bowl, combine the chopped apples, chopped onions, lemon juice, half of the softened butter, a bit of sage, salt, and pepper.
Step 3
Rinse the chicken under cold water and pat it dry with a paper towel.
Step 4
Rub the remaining butter over the chicken. Stuff the inside of the chicken tightly with as many apples and onions as possible.
Step 5
Place the chicken on a baking sheet, breast side up, and put it in the oven for 5 minutes. Then, turn the chicken onto its side and return it to the oven for another 5 minutes. Next, flip it onto its breast, drizzle with the rendered juices, and put it back in the oven, reducing the temperature to 355°F, for 45 minutes to 1 hour.
Step 6
Arrange the remaining apples and onions around the chicken and roast for an additional 30 minutes. Let the chicken rest at room temperature for 10 minutes before serving.
