
Golden Braised Chicken in Spiced Tomato Sauce

Ingredients
- Olive Oil 5 tablespoons
- Onion 2 heads
- Celery stalk 2 pieces
- Garlic 4 cloves
- Grated Ginger Root 1 piece
- Turmeric ½ teaspoon
- Mild Chili Spice ½ teaspoon
- Ground Cumin 1 teaspoon
- Smoked salt 1 teaspoon
- Ground coriander 1 teaspoon
- Garam Masala 2 teaspoons
- Baking Tomatoes 30 oz
- Chicken Broth 10 fl oz
- Poultry 5 lbs
Step-by-Step Guide
Step 1
Preheat the oven to 320°F.
Step 2
In a large pot with a lid, heat 4 tablespoons of olive oil, add finely chopped onion and celery, and cook for 5 minutes. Add minced garlic and grated ginger and sauté for a few minutes.
Step 3
Add the spices and cook for a minute, then pour in the broth and add the tomatoes. Season with salt and pepper and add the chicken. Cover with a lid and place in the oven for 1.5 hours.
Step 4
Remove the lid and brush the chicken with the remaining olive oil. Baste with the juices and return to the oven, uncovered, for another hour, until the chicken is nicely browned.
Step 5
Carefully transfer the chicken to a serving platter and cover with foil.
Step 6
Bring the sauce in the pot to a boil and simmer for 10-15 minutes until slightly thickened.
