
Golden Beet Potato

Ingredients
- New Potatoes 30 oz
- Olive Oil 2 spoons
- Dried Rosemary 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Thoroughly wash the potatoes under cold running water and dry them well.
Step 3
Place the potato on a cutting board and carefully slice it into thin rounds, ensuring not to cut all the way through.
Step 4
Repeat this process with the remaining potatoes.
Step 5
Place the potatoes in a baking dish or a cast iron skillet (just make sure that the handle of the skillet is also cast iron and can be placed in the oven).
Step 6
Drizzle the potatoes with oil and thoroughly coat the cuts.
Step 7
Sprinkle the potatoes with chopped rosemary, and season with salt and pepper.
Step 8
Bake the potatoes until they are golden and crispy. This will take about 40 to 45 minutes.
