Glass Noodles with Ginger Sauce
Ingredients
- Glass Noodles 0 oz
- Cucumbers 4 pieces
- Salt to taste
- Ground chili pepper to taste
- Honey 2 teaspoons
- Soy Sauce 3 tablespoons
- Lemon Juice 1 tablespoon
- Celery stalks 2 stalks
- Garlic 2 cloves
- Paprika 1 teaspoon
- Tomato 1 piece
- Fresh Spinach Leaves 1 bunch
- Canned Corn 1 can
- Ginger 1 tablespoon
- Ghee 1 tablespoon
Step-by-Step Guide
Step 1
Thinly slice the cucumbers into rings and place them in a bowl. Add salt, a pinch of chili, and honey. Massage the cucumbers well so they absorb the salt and release moisture. Let them marinate while preparing the other ingredients.
Step 2
For the sauce, finely chop the fresh ginger and mash it in a bowl with a pestle or crush it with your fingers. Add soy sauce, lemon juice, honey, and salt. Just like with the cucumbers, let the sauce sit for a bit. I then strain it through a sieve to remove any pieces and fibers of ginger.
Step 3
Open the can of corn (if using fresh, you can take 1-2 ears and cut the kernels off with a sharp knife). Chop the celery. Add to a heated skillet with a tablespoon of ghee, add salt, paprika flakes, and cook until the kernels are soft and golden. At the end, add finely chopped garlic to the skillet.
Step 4
Chop the tomato and fresh spinach.
Step 5
Boil the package of glass noodles, rinse with cold water, and drain in a colander. Sauté briefly in a skillet.
Step 6
In a large salad bowl, mix the hot noodles with the other ingredients, not forgetting the prepared cucumbers and sauce. The noodles are ready!
